1 teaspoon finely minced crystallized ginger

1 teaspoon floor ginger (divided use)

1/2 cup low-calorie sugar substitute (comparable to Splenda)

2 teaspoons floor cinnamon

1/4 teaspoon floor cloves

1/4 teaspoon salt

2 eggs

1 teaspoon vanilla extract

1 (15-ounce) can pumpkin puree (not pumpkin-pie filling)

1 teaspoon cornstarch

1 (12-ounce) can evaporated skim milk

1/2 cup gentle whipped topping

DIRECTIONS

Preheat the oven to 425 levels.

Make the crust: In a bowl, mix the graham-cracker crumbs, maple syrup, oil, egg white, crystallized ginger and 1/2 teaspoon of the bottom ginger. Press right into a 9-inch, nonstick pie pan to type a fair crust. Put aside.
